Elaboración:

The grapes are destemmed and crushed and then passed to the pneumatic press, then the must is sent to a tank to decant (decant) for a day, after which time the clean part is separated for fermentation (18 º C) and the sludge is filtered with the vacuum filter. After fermentation, the wine is racked to separate it from the lees.
The method of production to obtain the sparkling wine is the Traditional Champenoise method, in which the first one involves the "Tiraje", in which the base wine is bottled and the yeasts are added, which will carry out the second fermentation in the bottle at a controlled temperature of around 15º C. The wine will remain closed until after nine months, the "Degüelle" will be carried out, in which the veneer is removed from the bottle, which keeps it closed together with the yeasts, the liquor is added and finally the bottle is corked.

It is yellow, glossy and satiny with reflections of the olives. The effervescence is generous, fine, regular and orderly bubbles but with a certain independence. Lace provides creamy feel and a delicate pearl necklace.
Its first nose shows a fresh tonic, a combination of aromas, florals, fruit trees and vegetables with a more assiduous presence of acacia blossom, lime blossom and fresh grass, and when shaking it seems that corollas of magnolia blossom open and shows notes of distant brioche and hints of honey and thousand flowers. There is no lack of brushstrokes of stone fruit and white flesh nuggets. The ending reminds of caramel notes. It clearly obeys the varietal.
The attack on the palate is lively and elegant, the floral flavours return and it seems to want to show a certain minerality. The body is more like fresh nuts and dried fruit with a fair touch of tart grapefruit, eclipsed by a finish of delicate, integrated flavours, with a lot of grace and lightness.

Serve between 6-8º C.  It goes perfectly with all kinds of fish and seafood as well as with Asian food.
